As a result of the crisis generated by the effects of the Covid-19 health emergency, many Food Service players have converted their facilities and directed their proposals to Convenience Food and Fifth Range solutions.

All ready meals that are packaged already with their seasoning always have the problem of not achieving a quality up to the standard of express preparations to which one is normally accustomed. The addition of a sauce in pasta or mantecatura in risotto ahead of time leads these foods to soak up liquid, losing the characteristic texture that makes them enjoyable. If they are then stored for a long time, even if in the refrigerator, the problem becomes more pronounced.It is precisely from this analysis that the Ultimo Tocco project and product line was born. Ultimo Tocco was founded as an innovative startup dealing with R&D and Food Innovation to develop contemporary restaurant formats projected on the food businesses of the future. It was founded in May 2019 by Simone Lioci, Mauro Olivieri and Food Lifestyle Srl, another innovative startup referring to Food Designer Paolo Barichella.

It is an ambitious, innovative and contemporary project based on the possibility of moving the last part of the restaurant’s express cooking procedures to the home or office of those who wish to be able to enjoy the same quality of express dishes that can only be consumed in restaurants.

Through Food Design, Ultimo Tocco offers its products in kits ready to be regenerated in a matter of minutes, but also all the tools and procedures necessary to achieve star results made without a kitchen, without a chimney, and without chefs or staff who have experience. 

Each Ultimo Tocco product is the result of research and development through innovative product preservation techniques and methodologies such as IQF, cryogenic blast chilling, MAP, ATM (protective atmosphere), respecting the ingredients and preparation of raw materials, properly processed in anticipation of subsequent assembly.

Jelly cocktail

the product includes a water-based viscous part characterized by the fact that it contains within it capsules or beads containing alcoholic substances of our choice.

Ini

a soft and delicious cream, sweet or savory, enshrined in a fragrant 2.5-cm wafer which preserves and enhances the taste.

Special Coffee

It consists of the combination of a cup of coffee and a dessert (a panettone or chocolate cake...) prepared directly in the cup in which it will then be served.

Metacibus' Products

Ultrasound-treated processed products to be integrated into the Ultimo Tocco project: these are ultrasound-treated products with the Metacibus equipment to be integrated into the Ultimo Tocco project and to be marketed as: - Hummus - Giardiniera - Legumes - Fish - Fried Food - Meat

Gourmet Smartbox

It is a solution designed by deconstructing the dish, separating the Main elements that make up the dish into three to ensure quality over time, allowing a gourmet dish to be prepared in just three minutes, anywhere and with great simplicity.

GOURMET SMARTBOX'S FEATURES

1) The basic elements are pasta, in all its forms, short, long, stuffed or rice, cooked through the most advanced technologies, putting them in a kind of “hibernation” inside packages in a protective atmosphere until the moment of preparation.

2) To these is added the dressing, a soft, velvety cream that harmonizes with the first element and prepares it for the reception of the third. It changes its accompanying role depending on the base in mantecatura, sauce or sauce, varying its composition for each recipe based on EVO oil, cheese or vegetable, identifying the dish.

3) The third element is the real Last Touch, the completion of the gourmet recipe ready in just 3 minutes in the microwave and capable of expressing a complexity of fragrances, with recognizable values of quality and palatability of a complete dish. The third element expresses the recognizability of the recipe through its concentration of flavors and refined balances that make it the marked and characterizing element of the preparation. It is possible to choose from 50 different pasta and risotto recipes that can be further customized according to taste and territory.
